Our Olive Mill

In October, November and December, we work incessantly in our Mill for the transformation of the oil.

 We pick up the olives at the right degree of maturation with the help of the manual gathering or with special combs directly to the tree. They are taken to the Mill the same day and conserved inside perforated plastic boxes, for milling them in 24/48 hours and adequately managing the extraction system assuring that the oil will maintain unchanged its organoleptic properties. The extraction method of our Mill can be divided into four phases : crushing, kneading, settling and separation. No matter the method used, at the end of these operations, the oil has to rest, as all the external substances can deposit at the bottom (settling), for passing then at the pouring off... After a short period of resting, following the needs of our customers and the quality of the product, the oil can take part to a filtration process which will make more limpid. (somebody like it darker)

Crushing

The crushing machines are constituted by apposite cylindrical recipients, where the olives are crushed by mechanical parts in steel which move at a high speed. Apposite water rooms, around the machine, help to maintain optimal the temperature of the paste.

Kneading

In the kneading process, there is the rupture (mechanic and enzymatic) of the cellular membranes with the emission of oil, water and other composites (ex polyphenols), which are lost in the mass while the oil drops get bigger and aggregated for coalescence. The remixing should not make emulsions. During this operation, the oil get aromatized with the flavour and savour of the olives.

Settling

The olives, once they have been crushed and transformed in paste, get into the centrifuge separator with the horizontal axe, the decanter. This allows to separate between them, the three phases presents in the paste: oil, water and husk, with different specific weight, thanks to the centrifugal force. The liquid part, composed by oil and water, gets into the centrifugal separator while the solid one (husk) gets into apposite recipients.

Final separation

The separation of the oil from the oil must is done by centrifugal separators at vertical axe, which run on the theory of the substances separation for different specific weight, in a centrifugal force field. This allow to separate the vegetative water from the oil, and also to take away the biggest parts presents inside the oil must (small parts of paste or mucilage.
